But rule of thumb bro is what I was told. ah Resting is is probably as long as your cooking. So if it cooks your five to seven minutes then let it rest five to seven minutes. i Let those juices lock into that steak.

like i was was a stay cooking the other day and now resting in between flips in all that too like put it on mr and then weck it back on the and is that something that you Gee, that's ah as long as you've got a high heat, a hot air pan going, ah that pan goes down. There's a difference between searing and um Boiling, so you want to have, you know, you want to have your steak searing, but basting is good, bro. If you can control it, like put extra butter and flavours in there and you're basting it, ah but the heat's got to be high too. So as a rule of thumb, I i'd ah don't often baste, but I'll just season it up. But resting is key, bro. Resting is probably the just as important as the cooking part.

I think that comes down to your your restaurant. Are you at a black plate restaurant? or you It depends on the cut too, I reckon. So what's your three main cuts? You normally have an eye fillet, which is lean as fuck. Then you've got your sirloin, which depends on what end of the sirloin it's from. If it's in the middle, then you're going to have a pretty good nice sear. But then you go to a scotchy bro, and that thing can be a bit blacker because it's got a little more fat in it. so Yeah, you want drawing that greened out too, don't you? It was probably the big thing. To be honest, because I doubted myself before I got into the role, I thought, it might be a bit more... I think I've got a bit more than I can chew, if that makes sense. But I think I've got the ability and rightly so. I think I lack a bit of confidence now and then.
