Today we are thrilled to welcome back Emma Evans, the creator of Wine with Emma. Emma is a WSET Level 3 certified wine psalm on a mission to make wine simple, approachable, and enjoyable for everyone.
Speaker: So we are so excited to chat with her and, you know, chat about wine, finding more joy in every glass, as well as debunking some myths about wine. Welcome back, Emma.
Speaker: Thank you. I'm so excited to be back. Thank you for having me again. we are so excited to have you back. You are so fun. This is like a little reunited moment. We all got on and we were like, so excited. So and I'm so happy that you were like, heck yeah, I'll come back because we we just love that and we love you. So welcome back.
Speaker: Thank you. yeah And honestly, like we still like chat about you all the time and like other episodes, if you've been listening, like we'll randomly remember facts that you told us and we'll like, make oh, we have to get Emma back. Like she's and improp or she's probably listening and cringing at what we're saying. Yeah, we should be a regular. Yes. i use of them We would love it.
Speaker: Yes, we were like, well, Emma said this. so um So yeah, we love you. We're so happy to have you back. You were on two years ago back in season four, which is so crazy to think about. So for those who may be new to the podcast, may not know about you, give us a little kind of background on who you are before we kick into the wine. Give us like a little bit of background about you and tell tell our listeners a little more.
Speaker: Yeah, so I have been in the wine industry since 2016, so I'm hitting 10 years this year. nine I'm a level three sommelier. It just means I got to drink a lot of wine to get a certification. i mean, like, what's better than that? I live in Wilmington, North Carolina, and i have three babies under the age of five. Since the last time I was on here, I had another baby. of So that's with me. And then I do private and public wine tastings locally in my area um and other really fun community kind of wine centric events.
Speaker: Love it. You've been busy. I was supposed to say not. So you're not busy at all. Like this. No, I have nothing going on. I'm really bored. Just trying to find more hobbies. Yeah, for sure. Like now you're going to now. Listen, you said you want to be on every. so Come on. youre know you You just signed up. and You just signed yourself up.
Speaker: Add it on. Add it on. And on top of that, I don't know if you mentioned, but you also got a puppy on top of I did. I got a puppy too, yeah. That's neat. Precious bubbles. Just a little puppy. Emma's basically queen of queens just slaying her way through life drinking wines. Good wines.
Speaker: Maybe not all good. I don't know. We'll get to that. Well, no. I mean some are good. Some are bad. but I think we'll have a good one today. I'm crossing my fingers. So as we talk about that, are we ready to wine with the wine of the week?
Speaker: Yes. Let's it. All right. And this week, um our guest Emma chose our wine. So we are going be drinking the Olima Sauvignon Blanc. I did look up the pronunciation. So that is at first i thought it was Olima, but it is Olima. are going be drinking the Olima Sauvignon Blanc. So Emma, tell us why you picked this wine.
Speaker: OK, so i actually think that I mentioned this when you guys asked me my one of my favorite wines last time. We talked about Sancerre from Loire Valley of France. This, I can't afford Sancerre all the time because it's like $40 plus dollars now at Total Wine & More. So this is a baby Sancerre.
Speaker: Stop. Stop. yeah Loving it already. do you I hope you realize I am a Sancerre snob now. You are. I see a Sancerre on the menu.
Speaker: Mm-hmm. huh i but I get a Sincere every single time. And it's so funny when I was doing this, the description, I saw that this was from the Loire Valley, but I did not do, i did not tie those two things together. So I love this. Yes. Okay. So this is a baby Sincere. So under 20 bucks, you're getting good quality wine from a broader range. So not just from the Sincere region within Loire Valley. It is all of Loire Valley. Okay, cool.
Speaker: love my like My wallet real well. Um, so yeah, so let's see if it, how it goes. Yeah. I love that. But you've had this wine, correct? I've had this. I have not had this vintage though. so familiar here Could taste different. Wine making could be different. I'm not totally sure, but hey ohh that makes it more fun. now Amazing. I want to just hear your like professional thoughts on I know. The vibe.
Speaker: Yeah. Wait, I don't love that. um Yeah. So see, as proven, like we now drink other wines that you have taught us about, like yeah just pointing out. I love that. Yeah. Constantly learning from you.
Speaker: This is amazing. Yeah. We sit there and we're like, Emma would be so proud. So let's, let's learn a little bit more about the, the company, the Olima brand, and then a little bit more about the wine that we'll be drinking. And then we will finally get to drink this. I think you have a little trick to opening the bottle. So,
Speaker: Let's get to that in one second. Season eight. we I still don't know how to pronounce words, you guys. I blame it that my brain thinks half in Spanish and half in English. Okay. Like,
Speaker: Give me some grace. Okay. I'm trying. I will. I will. Thank you so much. Anyways, it is a finely detailed mineral driven expression of the, oh gosh, Loire, Loire Valley.
Speaker: So we've got aromas of chamomile, fresh lime and crushed rocks lead into an elegant, precise palette layered with pear and tangerine. bright acidity and a focused mineral backbone carry through to a clean refreshing finish that invites another sip so interesting but it sounds refreshing honestly i'm not gonna lie it sounds weird i don't know it's tangerine we'll see the tangerine's interesting and the it's the crushed rocks for yeah me rocks on the side yeah yeah
Speaker: young But Loire Valley wines have minerality because of where because they grow in rocks versus like dirt. so Okay. okay Honestly, I think I would prefer a rock versus dirt. I mean, if you think about it, like people will put like cold rocks in their whiskey.
Speaker: true. A little whiskey stone rock things. Yes. Yeah. Yes. I could buy them. I could buy them. I could buy them. yeah So Jamea and I already opened our wine and poured without knowing that there was a fun trick. So do tell the, yes, do tell the listeners. A two for one. So first of all, screw caps are okay to have.
Speaker: um We can talk in more detail about screw caps versus corks. It just means that the wine is meant to be drank right away. Most wines in the world, you're not going to age. You're just wanting to pop them open and drink them. So that's exactly what we do with this one. However, sometimes the closures don't um like actually close correctly. So you'll be like twisting and twisting it, and you can't get them to open.
Speaker: So you grab the base of it, of the capsule, and then the base of the bottle, and you twist opposite directions, and it pops this top right off. So ready?
Speaker: Oh. Didn't work, guys. It's stuck. I was like, no! I heard the pops. so I was like, oh, my gosh. No, so normally, when see how it's, like, twisting? Uh-huh. Yeah. We'll twist it right off, but it's actually- oh my gosh. Yeah.
Speaker: Get it open. You have the super glued version. God, I did. I can't even get it up still. They were like, oh, T.I., bring him back. Bring him back. We need him for other purposes.
Speaker: CTO? Yeah. yeah We need him back. Can we make an appearance, please? I literally am going to get him to come back. They were like, you want to open this on the podcast? we are going to super glue it down different plans for you um but yeah nine times as it works okay so basically hold the base hold the top and twist in opposite directions yeah so next time you have screw cap do it so without holding the screw cap itself you hold like the bottom yep just the capsule and then the bottle and just twist it okay and that's crazy yeah that's so wild to me what is it like pressure like is it like what makes you do that It like clamps it on. So if they don't clamp it on, sometimes like this top part is so clamped on. Like think of like a water bottle when you can't get that plastic part where it's like attached off. So it just kind of separates the little clamps. Oh.
Speaker: There she it is. There it Listen, if there was anything she was going to get open, going to be that bottle of wine. Okay. Yeah. It doesn't matter how long it was open. We saved it that all the time. Like we would have figured it out. We would have done it. We would have done it.
Speaker: One time I did a ah hair flat iron and you like heat up the neck of the bottle and it pops the cork off.
Speaker: Oh my gosh. If you don't have a cork. The only thing i have done with like heating a bottle is resealing it to bring it on a cruise full of alcohol, liquor, not. Liquor versus wine.
Speaker: h I've done that with steam from a boiling pot and I consider myself quite talented. Those are the years where I had to save a couple dollars. Okay. Okay. okay Now we can buy the drinks on the cruise. Now I can say. Now I love it and we can afford the drink on the cruise.
Speaker: We can. Yeah. You didn't put it a Listerine bottle? No. well we did well but Yeah, i never but don't know what you're talking about. What do you mean? The sunscreen bottle?
Speaker: Or like the fake sunscreen that was actually a glass. yeah I'm telling you, I'm telling you the best drink is you get the pack of La Croix's, you get your vodka, whatever, in your wine bottle. And then you go up when you're headed to the pool, you go up and you just get a little squirt of lemonade from the fountain.

Speaker: Oh my God. Okay. We are talking about affordability. This wine is very affordable, anywhere between 14 and $20. Are we ready to finally try this wine ladies? Oh my gosh. Yes. Yes. Right. I'm so ready.
Speaker: And then we smell and swirl and then smell and scent. So we look, we look at the color. Okay. Is it a white wine or a red wine? It's white. Very good, Annie. Oh my gosh. 100%. 100%. And then we're going to look and see, are there bubbles? Is there sediment? There shouldn't be either of those things. No.
Speaker: Okay. And then clarity, it's see-through. So it's um when you have completely like no sediment, very pretty wine, and that you can see right through it, it would be considered brilliant like a diamond.
Speaker: Oh, okay. thanks Okay. All right. Then the next thing you do is you swirl and sniff. You can sniff it first if you want before you swirl. And then swirl, get some oxygen into it.
Speaker: i'm doing this with my left hand and that is just not i'm like flipping around also did a very heavy pour so i'm like making sure nothing spills i'm like staring at the bad boy is anyone smelling crushed rocks also your glass is beautiful emma's always showing us i know i'm not like i literally bought like my finest china out here and like and i'm like oh that's really nice Okay, so the next time you're on, we're actually just going to come to your house. We're just going to your house. Seriously, just come. Oh, my gosh. How fun. Wait, I would love to do that come to one of your events. my gosh. Oh, my gosh.
Speaker: We'll chat all about your events. Okay. i feel like we've grown a lot, but let's smell it because 80% to 90% of what we taste is also what we smell. Okay. So the first thing i get is, like, a citrus note.
Speaker: Yeah, i was just going to say, definitely like citrusy, tangerine. I think it said pear and tangerine. I mean, i don't smell that specific, but I'm smelling like a citrus vibe.
Speaker: And I do think if you had a New Zealand Sauvignon Blanc next to this, you'd be able to tell the difference. A New Zealand Sauvignon Blanc has like a gooseberry grapefruit notes. This doesn't really have that. It's a little bit more subtle.
Speaker: okay Yeah, I can agree to that. It smells good. I mean, why? Yeah, I think it smells great. Sauvignon Blanc is one of those wines where if I had to do a blind tasting and I had to smell it, I'd be like, that's Sauvignon Blanc.
Speaker: I love that. It has, um it has these compounds called pyrazines that are very like, you know, some people like cilantro and some people don't. Yes. It's very similar. So pyrazines are a similar aromatic compound that some people just like are really sensitive to and can smell it. It's kind of like fresh cut grass. I get, I get it heavily in like a Cabernet Sauvignon. And then that's like one of the things I noticed in the Sauvignon Blanc too. so I'm like, Yep, that's Sauvignon Blanc.
Speaker: That's so funny. And I love that you said the about cilantro because there's people who like, like i love it And there's people who it tastes like soap. I'm like, huh? What? I'm like, it's not a concept. For you. Like I like the most cilantro, the better. Like cilantro it up.
Speaker: I know. I'm like, I'm sorry you hate. So so you were not the favorites list. Yeah. All right. And then bit I always take two sips. First one cleanses my palate. Second one's where I decide if I like the wine or not like the wine. And then the last S is to savor. So those go handin hand in hand.
Speaker: So let's do our two sip. Yeah. Cheers. Cheers.
Speaker: I don't even, and I'm going to take the second sip, but I already know. You already know. Same. That's going to go down way too easy. Yeah. and we sorry tonight I am known. i am known for that. i am known. Uh,
Speaker: Chances are high because it's good. And I believe, I believe you did mention screw tops are meant to be drink faster. So I think I'm doing the bottle of service. thats buy Did I say faster?
Speaker: Oh, that's what I heard. was it i think she meant like they're meant to drink like immediately. Right away. like like yeah right Right away. Right. Exactly. That's what I meant.
Speaker: like I heard it's like once you pop the fun don't stop like why like that's literally I was like okay sounds great to me say less that's what she told me to do so I'm always like a screw cap's perfect because you could just like pop it open in your car I mean I'm not drunk driving but or anything like that we do not that but like I was like, I take that back. I take that back. i Okay. This is wonderful.
Speaker: um i mean, you like, again, this is only like our second time having you on, but you always knock it out of the park. Like really, really, this is a very good wine. and again, baby sincere.
Speaker: i know. I feel like I instantly like, it's so funny. Okay. So since we're going diving into this wine anyway, what What makes it like a Sauvignon, this may be a dumb question, but like what makes it qualify as a Sauvignon Blanc and not as a sincere, like the way it's made?
Speaker: Because where it's from, so it's not, a Sancerre has to be from the, space so within Loire Valley, Sancerre in Loire Valley. So it can only be called Sancerre it's from that region specifically. This is from anywhere in Loire.
Speaker: So it's no Sauvignon Blanc, so same grape, just a larger region, which happens a lot with with European wines, like Chianti, similar. Right.
Speaker: So you can't call it that unless it's from that region, kind of like Champagne. You can't call Champagne Champagne or Champagne France. Unless it's, right yeah yeah. Okay, that makes sense. We're using the same grape from the same region within the same soils. We can't call it Sancerre, but we can call it Assomniant Blanc from Loire Valley.
Speaker: Yeah. And this is why it's hard for wine, though, because you're like, oh, my God, i love Sancerre. Oh, my God, i can't afford a $40 bottle every week or whatever, every day.
Speaker: And so tell for wine and it's it's really knowledge like you've got to know, OK, if I look for a Sauvignon Blanc, I'm in the Sauvignon Blanc section the Noir Valley and I might be able to find something similar.
Speaker: That is such a good tip, like such, such a good tip. Because even I like, I don't mind spending like a little bit like 30 to 40 on a bottle of wine, you know, to have.
Speaker: But sometimes it's like it's like, I can't like continuously spend that, especially if I like don't, maybe I don't know if I, what I'm getting into. um And then if you go out to drink, like a glass of Sincerra is anywhere between like 20 to $25. Like you're tipping more towards like 25 to 30. at the places that typically carry it. So this is like a nugget of very valuable information. And I am very proud of myself because when Jamina asked that question, i knew the answer.
Speaker: I was very proud of myself. you what level What level are you? Oh, I am level created by myself. but Yes, I'm level created myself. She's level creativity.
Speaker: Level created by Annie. um Okay, so you told us you... had another baby since that we, since we've seen you, she's going to be one very soon. so like update us, how are things going? How is life? How is being a mom two three to three? Yeah.
Speaker: It's good. Um, because I had quit my full-time job to stay home with my other daughter. but now both my, my two bigger kids go to school to preschool um I stay home with my littlest one um and it has been great. She's like the chillest baby ever. and I don't know if that's just because she has to be, but she truly is. And i do I do some freelance work also, social media.
Speaker: I work with a bar also. on top of doing my wine tastings. So everything's kind of still in the realm of everything that I'm doing, but it's a lot of freelance stuff. I get to take her with me and do stuff kind of around my own schedule. So that's been kind of cool. In between that, right after I had her, I actually worked for a THC drink company for a minute. Oh, tell us about that.
Speaker: Yeah, um it was it's a local company and Wilmington, and I was kind of heading one of their programs. But the law, there was like a law that was passed that kind of made them step back a little bit. And i think a lot of the THC drink companies are trying to figure out where they're going. And it just wasn't a great fit for me anymore. But I was i was asked to be part of the company without applying or anything. Like the baby was just born. And I was like, sure, let's work. yeah um So I had stopped doing that more recently. But um I mean, I think THC drinks are cool. I think it's a really huge ah like realm of a new drinking era for all different generations. It's really cool to see
Speaker: I mean, like the Gen Zs aren't drinking alcohol as much, but they're drinking the THC drinks. And then there's the people that weren't drinking any alcohol and didn't want to go out, but now they can have a THC drink while they're out with friends and feel like a social vibe to it. And then like, there's old people like my parents that drink the THC drinks and it's a good term. Love that.
Speaker: I still have not had one. I mean, I've had friends that like I've had them and like, I just have never tried them, but I know it's like a cold, not cultural, like a... like you said, like a generational almost thing. Like it's becoming kind of like a, want to say a movement, but it's it's ah it's a thing where people are moving away from like beer, wine, liquor, things like that, but moving towards these THC drinks. Isn't it called like, is it called garden gardening? or Yeah, like on social media, you can't say THC. Yes. So that everyone's calling like gardening or mood enhancing. Yes. Like meta will block you. Yeah. and we yeah So yes,
Speaker: I've tried one. i've i've had THC drinks, but I can only drink half of it. It makes me so sleepy. Like it makes me like so like, I mean, honestly, I think it's a great drink for like a nightcap. If you've had like a stressful day and like you just need something like ah kind of like taking like a baby Xanax, honestly. Like if you just need something to just like someone pull your shoulders down, i think it's a great. I had someone said they're like, it just like put a shield up for me. like Oh, that sounds lovely. like i It's not a social drink for me.
Speaker: It's not? No, not for me. Okay. For other people, maybe. But yeah I still need like a martini or wine with my girls. i can't have a THD drink. Yeah, it's like this. yeah Same. And that's like the first time I tried it. We were off driving to a girls trip. And so like, they like kind of sounds oh yeah, sure. I'll take Yeah. I took a nap on the way there because I was like, I can't have that. That's not my vibe for the weekend. Give me the special tinies. I need the opposite effects for a girl's weekend.
Speaker: um But I think it's great for a nightcap. I think like, like you said, it's kind of like a new movement of things, but it's definitely generational because like, I feel like our generation, this is where it's at.
Speaker: We're in the martini wine vibe, you know? Yep. And all my friends are too. Like we all have had them or like had a THC drink and stuff, but like not not when we're out together.
Speaker: It's more of like a, yeah, I had one at home last night after the kids went to bed kind of thing. Right. That's I'm saying. Like a nightcap. like Like, I can't fall asleep. Let me pop one of these bad boys in. I feel like I would do that. Take my little magnesium pills, put on my Nodpod and – Bye. She's gone.
Speaker: Yeah. See you maybe like at 10 AM. m She's going sleep in a little bit. Like she's gone. Literally no one is home. But you talked about kind of like girls nights, vibes, like kind of like your, your community, your tribe. Right.
Speaker: And we touched on this on our last episode that we did together where you said, you know, it may not be your favorite wine. and I'm not talking about this wine specifically. I'm just talking in a moment. You try a wine and you're trying something new. It may have been your favorite, but the moment itself made it memorable.
Speaker: And I kind of just like want to talk talk about that and talk about the community that you have built um with your platform. Yeah. Yeah. i still stand by that. I always say like, it might not be the best wine, but if you had the best time, it was the best wine. So I think I may have even mentioned this before, but ah my husband and i have a bottle of wine after our baby's born every year. So like, we'll get another bottle now. Um, and their first birthday and it's, and we sit on the front porch was just us. Like, I don't know if the wine was good or not, but I remember what the wine was.
Speaker: And I remember, like laughing and just having such a good time. And I think that's what wine brings people together. at least for me and my community, i moved to Wilmington four years ago and I didn't know anyone except my brothers. And now I have built a community of people. I have an email list of almost 200 people that want to come to my events that want to come to my, I do free community wine related events like wine bingo or like wine bottle painting. um I found some other, found,
Speaker: co started a book in a bottle, which is a wine and book club. So we pair a wine with a book. And then we all meet up after we finished the book and the wine at home at a local wine bar and talk about the book and do book discussions. So I really like created some really cool experiences and found like-minded people that like to read like me, that like to drink wine like me. And some of my best friends are now from that community. So it's been really, really cool.
Speaker: That's so incredible. And like this wine club that you ah like have have created and has grown so huge, it's free to join. yeah Right? yeah So it's free to join, especially if you're like in her area, you guys, like how fun, like I would love to find you, a you within my area. Like, can you, I think you need to franchise this. I think you've got something going on here because I, i mean, i would love to like be your under your wing, but like, I feel like I'm, you know, me.
Speaker: Once I start finishing the bottle, then ain't nobody going learn nothing. We're all just trying all new things, you know, like don't, don't get I would be a disappointment to your franchise. Okay. i'm there for I would be there for the face. Okay. I'm here to represent Emma, but we're going to zoom her in and she's going actually teach. you This is a pre-recording. Yeah. This is a pre-recorded session. that she's Um, because I'm not there yet. I'm still in training three years later. Yeah.
Speaker: It's like someone needs to, someone needs to stop her. did Emma, who did Emma get on board here? but you know what you have, you said you've like kind of like created this community, right? And these, these, I'm sure there's probably some men, but mostly I'm sure it is mostly women.
Speaker: You have to think about that's not only just like part of like your growing community, but imagine the women that come and meet other people. It's really hard at our age, especially I know for myself and Jemina, like we work from home. Like, yes, we have like friend groups. But when you work from home, like if I move to another another city and I work from home, like who would I meet? I would count on playdates and going to the park and like maybe going to a shop, a coffee shop.
Speaker: to work and like maybe meet someone, but like, let's be realistic. Like that just doesn't happen. So like the community that you're making, you're also helping others make their own community and feel comfortable coming to things like that and coming together on things that we all, let's a book.
Speaker: Yes. Love to read. Me and Jamina love to read and wine. Like that's some of the two easiest things you can come together over. So you should just be so, proud of yourself. I love you so much. how much much We love you. And we're not going to, we're now going to get emotional by talking about how much we love you. No, I just think you're so, you're just so great. And these ideas that you have, and it's very like community focused. I think it's so wonderful.
Speaker: Thank you. It has to be really cool. there was um I did a wine bingo when a girl that i has come to multiple of my tastings came to it. And she just like sat at a table with these other this other group of girls. And by the end of it, they stayed late, like kept drinking at the bar. By the end of it, she joined their murder mystery club that they do.
Speaker: and now they're all like really good friends i'm just like it's so fun to see how it really did like exactly what you said people get to meet their like more people through event yeah yeah and then like i one means i made people wear name tags because by the end of it we're all friends like 100 wine has brought us all together Yeah.
Speaker: Listen, after that, like one glass, you feel a little more loosey goosey to be like, Oh, like, what did you think about this? Or like, whatever the topic is, it just kind of makes you a little bit more like, let's chat it out. Like, let me find a new, like another bestie.
Speaker: Yeah. And by the, by the last glass, I do not talk at my wine tastings anymore. I'm just like, this is a Cabernet. Enjoy it. but like you know Email me. Okay. Mama's done. mom That would be me. See, this is why I can't represent your brand.
Speaker: My best friends come to like all my wine tastings and they're the worst. I'm like, who knows what this is? I'm like, You've been to all my wine. I'm not going to say names, Kelly, but you've been to all my wine. taste Kelly, raise your hand.
Speaker: Make it look good, girl. like come on She's like, I know you've said it. I know. Oh my God. Annie can vouch. That would be me though. Like I would probably go to 50. I would probably be at every event and then I would still not know the answer. i would just just like. Jemina would be giving out your email.

Speaker: someone that's new and maybe it's a new mom. Like they just made a connection because maybe they met another new mom there. And like, that's what brought them together. And now they're like best friends and like hang out and have play dates. And like, it's just such a fun, like, I'm telling you, like, I wish I had something like that here local. Like I would, I would live for it. Like this, this is, I know like it doesn't seem like it's bigger than what you're creating locally, but I totally see a future of something like if you like found like different areas to pinpoint and then how fun for you, you get to like travel and like be like, Oh my gosh, we have a guest speaker today, guys. Okay, so this so this first question actually makes me laugh because i wrote it down before i knew we were having a screw cap wine. This first question is, are screw caps for cheap wine? kind of debunk this for us because...
Speaker: We're having a good, we're having, we actually don't need you anymore. I'm going to pull a Cardi B on the stand. Like, I mean, look,
Speaker: You know, I know. Screw caps can be for cheap wines. And initially that's what they were for. But um there's also really cheap corks. So my like little story is that I met a winemaker and I had been working for a retailer.
Speaker: that was selling their wine. It was like one of the top selling Pinot Noirs. And he's like, how is it selling now that we change it to screw cap? I'm like, people have made comments like they're not happy that it's a screw cap now. And he's like, you want to know what's crazy?
Speaker: Those corks were cheaper and worse than the screw caps because there's technology that's in the screw caps to a lot, a certain amount of oxygen into the wines as the winemaker wants it to versus these corks are trash. And so corks can have cork taint They can make the wines smell like a basement or like a wet dog kind of thing. But the screw cap is not going to do that.
Speaker: So we like all the technology that's gone into a screw cap. um The original is a Stelven screw cap. If you ever hear Stelven, that's the name brand of it.
Speaker: um You really only want to cork for a wine that you're going to age and you're really not going to age most wines. You're only going to age a wine that has a certain year. So a certain vintage, a certain varietal from a certain region. So really you're not going age most your wine. ready be to drink So why not open it easier?
Speaker: Okay. so that's why That's wild to me. was going to say interesting. that like I feel like I've said interesting about something else, but it really is. and you And you know, you can pinpoint those bottles, the cork bottles when you've opened them and you're like, what, excuse language, but what the F is this cork here? Like this seems a little like. Great.
Speaker: It literally is now it like home Yes. It's like cork. Or they're like the fake. corks they're like the plastic cor yes not even plasticky what like what's that meant it's like don't even know what to call it like a rubbery like rubber plastic plastic rubber yeah it's yeah it's weird and then a lot of people were saying that it's for the environment we're doing the screw caps instead of the corks however corks are recyclable and The cork trees, look these up if you have not looked at them before, but in Portugal, there's cork trees. Every seven or nine years, i have not looked at this up in a minute, they harvest the trees. So they literally take like these really cool like knives and cut down on the trees and then give them seven to nine more years to regrow.
Speaker: So they're not harvesting all the time. The trees aren't getting cut completely down. They're able to regrow. So it's not really an environment thing, especially because we re-event. interesting see the word interesting so there's cork trees that's where the corks come from you guys not me thinking it's like a willow tree and it's just like dangling corks everywhere like i'm gonna pick my corks brb like This one's ripe. Don't pull that one. That one's not ready. Pull it by the step. That's how you get cork taint. Pull it by the step.
Speaker: Okay. You mentioned aging. um One of the questions is like white white wine cannot be aged, but pair that with like aging wines. Can white wine be aged and...
Speaker: kind of go a little bit deeper on aging wine. and like, I have a question because I have a bottle of wine that I've had in my fridge. It's a bottle of white wine. It hasn't been opened. I think it's a, don't know if it's screw or cork, but I just haven't opened it yet.
Speaker: it's It's still good, right? Yeah, so you're going to notice face was model if your bottle is like this and it's see-through, will see that your bottle, your wine will start turning brown. If it starts turning brown, it's it's oxidizing.
Speaker: So like literally oxygen is getting into it. Bottles not see-through. okay so it'll be hard to tell until you open it. um Most white wines we don't age. However, there are white wines that you do age. So like Rieslings you can age. There's some Chardonnays that you can age.
Speaker: Hi, Bubbles. Do you guys want to um i i hear Whenever you guys hear a little something in the background, it's Bubbles. Oh, my God. I'm wanting to be seen. Look at her. Stop it. Speaker: Yeah. Yeah. But most white wines you're not going are you don't age. You can age some like a Riesling from Germany, like a white Burgundy. So would be a Chardonnay from Burgundy, France. There are some that you would age. However,
Speaker: Most wines, like I recently saw a cheap Sauvignon Blanc that was brown, like straight up brown um from oxidizing and being in the bottle for too long. um I would say if you're past like if your bottle in your refrigerator, Annie, has a year on it and it's past 10 years, you're probably...
Speaker: bad but if it's just so it's and it's i think it's just yeah i just haven't had the chance and it was so good it was the bottle we bought jamie and we were together at that little like kids like play place or whatever and it was the wine was so good and i just wanted to like savor it again that i'm like leading us into the next questions and i don't mean don't blame you listen the reason she's asking is because she's about to bring that bottle of wine when i see her next time and she's going to serve me some oxidized brown sauvignon wine i don't want to here yeah Yeah. I don't want to like, here you go. So like my thing is like, and I also didn't want to open it and like drink a glass, then wait and like drink a glass two days later. it eventually go bad with just me drinking it.
Speaker: that's like another, i know another question we have of like, how long does it last after being opened? But yeah like, that's why I haven't opened it. And it's just sitting there and it was such good wine, but it's still sitting in my fridge untouched.
Speaker: But with that being said though, what about red wine? Like how long can you like keep a red wine if it's unmoved? Wait, if it's open or not open? Not opened. It depends. Actually, i have this bottle my parents gave me, like, sitting up here, that my mom's like, you need to open it. It's so old. And you need to do it on camera. You need to take a video, Emma. we I'm like, okay. and it's really real I love her.
Speaker: It's been like two years since she gave it to me since then, so I don't even know. Um... But it's really hard to tell. It's really hard to tell if a wine is ready or not until you open it up and try it.
Speaker: um That is why like a Spanish what? Does it taste expired? Like? what You know what I mean? like and it So like oxygen, it's really, most of the time, it's where we want oxygen. You know how like we were swirling our glass and we got oxygen into it. So we like oxygen for that.
Speaker: But then we're fighting with oxygen with time. So and it's the same thing when you open the bottle too. We're fighting oxygen this whole time. So when we have the screw cap or the cork, a little bit of oxygen is still getting into the wine no matter what.
Speaker: That's great for something that we're aging because it helps break down tannins and acid, which are if you have a high tannic wine and a high acid wine, that's something that you would want to age. Okay. And that becomes a sediment later on. However, if you don't have a lot of tannin and acid, it just oxidizes and turns like a brownish color. So the red wine is going to turn like a like a brownish color too, an amberish color. And then a white wine is going to turn a brownish color also. So you are fighting with the oxygen for that.
Speaker: You want the oxygen when you first open the bottle, though. Right. So you're in between. When you have already opened a bottle to so keep it to save it longer,
Speaker: um like see how this is empty space now there's oxygen touching my wine. So how do we stop that from happening so that it will last a couple more days? We can put it into a smaller container so there's not as much oxygen hitting it. We could put it into, we could put a stopper on it to get oxygen out of it. There's like vacuum bins where you vacuum out the oxygen. Um,
Speaker: Or you can drink it in one night. and You said just drink the whole bottle. I mean, nobody's going to stop you. Say love me. But we also, even it's ah if it's a red wine, you can put it in your refrigerator if you've opened It helps stop the oxidation process. So it'll make your bottle last longer if you're not going to drink it the next day.
Speaker: so throw the wine the red wine in the refrigerator for a couple days and then you can take it out, let it warm back up to your desired temperature. But at least it'll last longer. It won't oxidize as quickly. That's why we put fruits in the refrigerator so doesn't oxidize.
Speaker: right so what would you say is like the max like the max amount of time from opening to finishing would say between white and red i would say whites are going to last a little bit longer you're getting closer to like seven to ten days if you seal it well and put it in the refrigerator if you seal a red wall put it in the refrigerator i think you're going to hit five to seven days if you leave it on the counter you're you've got like a dead oh wow that's that's actually pretty impressive but if you also if you like open it after three days and it was on the counter and you like it like cool drink it do you think there's nothing wrong with it it didn't expire yeah it doesn't taste the same so that's that's what's hard with wine
Speaker: Yeah. Listen, I have no shame and drink. We drink a lot of wine on this podcast and there's, Jamie and I get up early to work out. So a lot of times it can i have a little glass yeah and then you wait and maybe we do two recordings a week.
Speaker: Sometimes the wine builds up and I have no shame making my dollars stretch and going and drinking a glass of like week old red wine. Now, is it the same when I first opened it? absolutely Absolutely not, like you just said, but sometimes you just gotta, you just gotta to do it. You just gotta to do it. Yeah, it's there. you know it's like It's there. it's there there She's ready. If you gotta add your Coke to it to make it taste better, then do it. I have a sangria now.
Speaker: It's the same area. Did I tell you that story, Emma, on the last when you were on? that That's how I started to like red wine was because like everyone was drinking And I'm like, it's awful. like I don't like red wine. i was making red red wine coke Coca-Cola spritzers to make myself and like it. Speaker: Right? But what you're saying is I shouldn't drink the, um and I know I brought this up other two yearss two years ago when we last met, I shouldn't open the 2015 Italian wine I brought back from Italy and it. It just like depends on what the wine is.
Speaker: Yeah, I don't even know. going to Italy in You are? oh my gosh. Oh, I cannot wait to see the content. Yes. It's going to be so good. Oh my God, I'm so excited.
Speaker: Yeah. I'm so excited. And if you don't, yeah I'm going to go ahead and plug this in now. So it's like all of my office stuff and I have spilled a lot of wine in here. so I'm no longer like trusted to have like an open container, if you will. So last time we met, I had my wine and I think in an insulated cup and you had mentioned that it kind of matters what kind of glass you drink your wine from.
Speaker: So my new question is, does the like stem, like the leg, is this the leg? of the the slide um this a but yeah Does that like matter? Cause you know, okay. You know, those videos that are out right now. It's like, I didn't know I was high maintenance until someone brought me my wine. And it's like that short little fat glass. Oh my God. Am I poor? Like, you know, like you just like,
Speaker: second No hate to if you that's your wine glass type. Plug that in. case im like The dollar store has better glasses than that. like Literally. literally like yeah so like Does that matter? I know we like chatted about the glass itself.
Speaker: Good question. So we have the stem on a wine glass so that our hands don't get on the bowl of the glass, because when our hands are on the bowls of the glass, um the aromas from our hands can then impact the way the wine tastes.
Speaker: So we want to hold our wine by the stem. So that is why we have a stem in the first place in general. um It doesn't really matter how long your stem is or how short it is um or how stubby or ugly it is.
Speaker: the thing that matters is the the rim around the outside of the glass. So when you eat those short, stubby glasses and then you have a thick rim, that's going to impact the way that it tastes. The stem is not going to have any impact, but the rim around the top is going to have the impact.
Speaker: OK, I did not. And what kind of rim are we looking at here? Yours is looking mighty thin. Yeah, so all of ours are relatively thin. Yeah, I think they're all thin. So they this is like a laser cut glass. So you can, I literally, for my wine tastings, have an eight pack from Sam's Club for $20 that are phenomenal wine glasses. Seriously, like 20 bucks at Sam's Club for really good wine glasses. They're laser cut at the top. So that's what you're going to want look for is a laser cut.
Speaker: Okay. hey And then real crystal. real crystal Right. The tips, I mean, the tips are, you guys have to be writing this down. Like, everyone listening, you guys have to be writing this down because it's like, duh.
Speaker: Okay, not this is totally the wine, but when you were just like, the tips, because I thought were the tips of the wine glass, and I'm like, the tips.
Speaker: Sometimes it's not just the tip, you know? The tips sometimes matter. but power sometimes more little tips matter sometimes it's not just the tip okay just just the tip i'm sorry you guys about writing down the tips that emma is enlightening us with suggestions advice um our other options so why yeah i'm so sorry ah Just the tip.
Speaker: That's so funny. I think i found the title of this episode. Sorry, go ahead. the tip.
Speaker: yeah um But no, but like with that being said, though, like when we first came on, I mentioned that like I accidentally, wink, wink, gave myself a heavy pour.
Speaker: How does that work? Yeah.
Speaker: matter like the amount um Well, technically, if you're at a restaurant, you're not going to get the kind of pour you're going to get at home, right? ah But like, for example, if I only poured this much into my glass, I can swirl it more. So there's more oxygen touching the wine. So it's going to taste a little bit different than if I had a fuller glass.
Speaker: As it gets warmer, it tastes different too. so This is kind of my other advice. If you have a really cheap wine, make it really, really, really, really cold because it numbs your palate and you can't taste what it would taste like otherwise. So you've got like some cheap $2 or whatever, throw it in the back the refrigerator and make it go as cold as possible. um So the colder you're not going to taste as much.
Speaker: as it gets a little bit warmer, you taste more aromas. However, white wine, for example, is going to get warmer and it's not supposed to taste that way. Like the winemaker doesn't want you to taste it warm. They wanted you to taste it more at that like 45 degree aye temperature. So yeah, I think that if you had a bigger glass, it's going to change what time is going to be a little bit different versus if you had multiple small glasses.
Speaker: Right. Yeah. Right. So it's like, I don't know. How does your brain work? Do you want to keep pouring it or would you rather just have one big one? I don't know. I don't, I i like both. When I'm paying for it. Yeah. i Like give me the whole bottle.
Speaker: Yes. I guess I can portion myself. I do love a heavy pour at a restaurant. It's always like when you know they're going like a little above, you're like, yes, yes, keep going. But then at home, I do love when you pour that like fresh crisp glass and you finish it. yeah I just need to go another get like crisp again. Like,
Speaker: nothing really beats that like crisp pour. And also like, look, I only poured this much for my first glass. Like I was like doing one of my wine tastings or something, like how my brain works, but I'm like, look how much is left. Right. It's also like, much with. Like when, when, when, because like there's more, you know, like there's more out there. So speaking of, your your tip, you know, advice, if you will, um, of cheap $2 wines, make it really cold. I'm, I want to get your take, um,
Speaker: on this whole because me and annie have sampled and we kind of like it what are your thoughts i don't know if you've tried this what are your thoughts on the frozen jalapenos in a saw bb oh okay so i actually did a wine tasting a private wine tasting for somebody and we did like the test of it it was fun we did the jalapenos we did frozen mangoes frozen strawberries and frozen grapes and so it like paired with each one we didn't do a sauvignon blanc we did a alberino which would be like a spanish acidic bright fun white wine so it was like a good combo and it was delicious love that everybody loved it um it wasn't too spicy like i had taken the seeds out ah ahead of time whatever and froze and froze the jalapenos but
Speaker: Everyone thought it was like really refreshing. Yes. It changed the way the wine tasted. Like we tasted the wine before we did the experiment. So we knew what we were tasting and then we had separate cups. So if you didn't like it, you didn't have to like commit to it kind of thing. Okay. It was people liked it though.
Speaker: it was people liked it though Yeah. Okay. what Did you guys vote on which one was the fave? Oh, um the jalapenos was the favorite. The least favorite was the frozen grapes. It changed the way that the wine tasted, which I was shocked because I didn't think, I thought that would be the most neutral. Yeah. And then the mangoes, frozen mangoes were good.
Speaker: Yes, yes. I did the mangoes and I forgot what kind of wine it was, but it was really good. I did the frozen mangoes. I can't remember. Well, we did the rosé with a strawberry and that was good. Like, can't remember what we did either with the mango, but it was a white wine.
Speaker: fun. I like the trends though. Like I've always been like, make a spritz if you don't like the wine. Like, yep. Right. Yep. spice I know. I love these trends that are coming out where like, add this, add this. I really want to do like a jalapeno, mango, like Sauvignon Blanc, like together and taste that and see, um, how it is. But i also want your opinion on, so like there's different want to like rules or like things that you kind of like always follow as a psalm what's something that you feel like is like kind of a good your rule breaker about more often than not or something that you see across the industry um this is hard I would say just like food pairings in general I think are just kind of
Speaker: there It makes sense. Like I understand where people are like, well, a red wine with a steak. Well, that's because the red wine's tannins attract to the protein. I get it. Like, yes. And I don't want a red wine with my chicken because now all I can taste is a red wine, not the chicken. So like you don't want something to overpower it I understand that. But also like, if I only have red wine, and I'm eating chicken, because like, that is mostly what our diet is, is chicken. It tastes great. Like, it doesn't matter. Yeah.
Speaker: Um, pairings are like the biggest thing in the wine industry that people are real weird about that. I just don't think it's worth it. Um, like another one is like, they say that wine and chocolate don't pair and sounds weird, right? Like as the consumer, you're like, what do you mean? Wine and chocolate Valentine's day. We always do that in the industry. It's like chocolate and wine do not pair. They are not good together. You can only have a wine that's sweeter than the dessert for a dessert and wine to pair together.
Speaker: Oh, right. the wine would have to be sweeter. So think about how sweet that wine would have to be. Yeah. I've literally done a wine and taco class with dry wines and it worked. Yeah. So it's like, I just don't think those...
Speaker: Those kind of, I don't know, like, yeah you can learn it and it might make sense on paper, but you have to do it. And if you like it, then cool. Like I've never liked ice cream and wine together. I have not found a wine that goes with ice cream, but if you find one that you like, awesome. That's great. I'm so happy for you. It's so good. I'm so happy for you. It just doesn't work for me, but maybe that's just my palate.
Speaker: I love that answer, though, because I feel like food pairing is such – even when you're out to heat and you're like, oh well I'm getting a steak, like, I really want a glass of, like, white wine, but like, I'm getting a steak, so I've got to get the cab or I've got to get the pinot or whatever it is. Like, I like that answer because I feel like – I think people like hold that in the back of their minds at all time. It's like oh, I'm eating seafood. I've got to have a white wine. Like, sure, if you want to. But like, if you've got a red, like you're ready to open, just open it up, you know?
Speaker: Exactly. And like, it might not be the perfect pairing, but if you like it. Right. Yeah. Yeah. So each their own. And it's also like, I think it's a lot of of of a mental thing too, right? Because like, we just picture a steak with red wine. Like, that's what we picture. That's what we see. But like, if you don't like, don't like it, don't get it. Like, it's you know and also like what you said about like the wine has to be sweeter than the dessert i cannot know like i would i would be no my stomach would hurt like what no i think i would want a dry to like compliment my sweet yeah or just like na have a cocktail i don't know like persatini that's when these persatinis come out exactly

Speaker: I'm obsessed. It's so good. It's so good. so it so want to ask you because you mentioned that you've had this wine before, but not the vintage. What is your thoughts comparing those? I think they stayed very consistent. So I'm not sure. I don't, I don't specifically know the vintage and Loire Valley in 2025, but having them had this wine before knowing like, okay, I did like this. Let's, let's bring it on the wine mama and see how, you know, um, no, I think it was good. They did a great job still.
Speaker: I know. Okay. I agree. I i mean, i haven't tried the other version, but like they're doing their job well. So shout out to everyone. at Olima.
