Well, okay. So, I actually, I brewed a beer this week, not the triple that I was talking about because... I didn't have all the ingredients I needed for it, but I thought, you know what? I'm going to give this bit of a crack on my system, see if i can get somewhere near what I wanted to do in terms of gravity and and all the rest.

And that went to shit. something you fail i used more rice hulls to aid filtering through the mash than I've ever used before.

Explain what is a rice hole, Kieran. I don't even know what that means. Well, rice, they're seeds, right? Yeah. And they they come with a little husk around them.

And you use those husks to aid the filtering of your mash when you're trying to rinse the grain out at the end, laudering as it's called. um And it aids like just and i it's the movement of liquid through the crushed grain.

especially when you've got loads of flaked adjuncts like wheat and oats in there. And then I also use naked oats, which don't have any husks on them either.

And in order to get the extract from them, I fucking pulverized them in my mill, basically turned them into porridge. um Like, you know, this baby grrrt, the baby porridge you buy? Yeah.

Yeah. It was finer than that. yeah And it was just like, so it basically turned into a fucking giant porridge in my mash tun. And it was impossible to do anything with.

So I was just like, motherfucker. ah So, yeah, it turned to shit. But, I mean, I managed to get in the in the vicinity of where I wanted to be.

a with in terms of the the gravity of the beer. And so it'll be come out around 6%. So that's kind of where I wanted to be. and What type of beer is it?

So this what I ended up – sorry, I should have – the pretext was is that I was going to do this big triple IPA, didn't have all the malt and oats and things I needed, but I had enough to do a 6% of something similar.

So I was like, fucking coconut, lime IPA, Iwikiam, ba-bam. So I brewed that one. um Yay. and So that's ah that's turning out pretty good so far.

and It's still fermenting out now. I dry hopped it yesterday. So that's the biggest dry hop I've ever done, 15 grams per liter. I've never done such a big dry hop before.

Hmm. Uh, so like I'm influenced a little bit by this guy, Boz, I work with and he's like, he's like 20 grams, 35 grams per liter. Ah, like hops, hops, hops. I'm like, okay, I'll give him normally like eight to 10 is my max.

Cause I've read a lot of data on this and they say that the saturation point with hops is somewhere between eight and 10. there's not much point in adding more than that. But some people beg to differ, so I'm going to give it a crack.

So that's what i'm doing. Nice. So, yeah, it's dry hopped. It's tasting pretty good so far, considering. Yeah, like well when you taste it from the tank, do you get already the lime and the coconut?

Well, the coconut is something we'll add post-fermentation because it won't. The coconut is such a delicate flavor. The the fermentation will destroy it um the yeast will basically broke up those aromaprofiles and it'll go.

And plus, if you add coconut in the hot side, which you'd have to do in this case, um you would lose a lot of the ah head retention because there'd be fats from the coconut that would go through. Whereas if I do it on the cold side, less fat is, even though the fat in in holds a lot of flavor, less fat would actually be and transported into the, like dissolved into the the into the beer itself because it's cold.

Yeah, okay. Yeah, so basically, yeah, okay. So there's um there's those kind of things that I'm considering there. So in this case, Hot Side, I had Citra, Centennial and Motueka.

Though I have to say, umm i'm really disappointed with New Zealand hops, especially with Motoweika at the moment. um No one in Norway can get a decent, fresh, like good quality bag of hops. Now, I got some stuff from Yamaka Chief, which is a big hop a a distributor, provider yeah out of the US, and they'd clearly repackaged some Motoweika, which is a New Zealand hop,

And it was oxidized. It smelled like fucking cheese. it was rubbish. Absolute fucking rubbish. And I was just like, I was so disappointed because this is supposed to be the beer that, you know, it's ah it's supposed to have this like fresh lime zest aroma on it.

And it had none of that. It was fucking dead. And I thought thought, okay, well, I'll get some some stuff from another supplier. Same shit. A little bit better, to be honest, but the same shit.

And i was just like, what is going on with New Zealand hops? Because I know these hops are fucking great, but no one here can treat them in the way that they deserve. And one has to wonder, I'm like, are they are they doing this on purpose? Because these these other companies that are repackaging them,

have their own invested interest in like citra and mosaic and other things and like are they just letting it ah packaging it do it badly so that it doesn't last so long and people go oh new zealand hops are not good i'm not going to use them we'll just go stick with citra and mosaic you know and keep lining their pockets So it was it's been a bit of a disappointing journey with hops, unfortunately.

But you know what? I'm like, all right, the citrus is still good. Fuck it. I laid it straight into their hands and I bought more citra.

So I just dry hopped it with more citra. And I threw in a bag of ah of some some Nelson Savine, which is ah is a New Zealand hop as well. um Maybe that's what you should get into, Kieran.

Hop input or importation. And not in Norway. That's just silly. Well, through Europe. Why not? yeah Anyway, there's um yeah there is enough people. I mean, if you bought it directly from Freestyle Hops, which is the New Zealand provider, of yeah yeah I think it would be a different case.

was super pretty impressed. It was just through the regular post too. ah So it was super quick and i'm really happy with that. And um the toasted coconut came. i opened a bag just to test them out.

nearly emptied the first bag of I, I've got to stop this cause I got to use this in the beer. So what I'm going to do is take this toasted coconut and I'll, I'll run that basically a couple months or month or two ago, i started talking about how I was building hop rocket.

And so basically I'm going to use that, uh, that kind of, what are you going to call it? Like a, Chamber. Chamber filter. And then so basically the beer comes from the bottom of the tank ah into a pump and then the pump pushes the beer in through the filter full of full of the full of coconut and then back into the tank. So it circulates it through the filter of coconut.

And so the idea is is I just run it for half an hour, taste, see how it's going. run it a bit longer, taste it again see how I'm – and when I'm happy with the flavor infusion, then I'll stop and package it. so By the way, tips ah with ah anything you're getting ordered in. Like if you can somehow order in something a little dangerous into your package –

And we, as I mentioned earlier, we stayed at this Airbnb, which is owned by some friends of ours. And we went up to hang out with them and some, actually, one of the, a sister-in-law and her husband dropped by.

And like right from the get-go, the guy was on it. Like he was just like, hi, how are you? What's your name? where are you from? Like, what's your deal? Like, no and just questions firing left, right and center.

And it was so refreshing. to feel like I'm not like trudging through like this social muck of trying to feel like I can. And so, and of course this like created like a dynamic where I could ask him and we got to know each other really well.

And like, and it got like, and i was like, this, these guys are lovely, you know? And then he got it like, I was like by this stage, like, The beers had come out and a lot of my beers were there.

And so he's like, oh, you could you know what? I've seen these before. I've tried these beers at the pool. And I was like, Really? That's cool. He's like, yeah, I really like them. And I really like this thing. And and like I explained the concept of what, you know, the brand is. And he's just like, yeah, like this is this is something really different. I really like this, you know And it was so nice to have that kind of conversation with someone who was just curious about another human being.
