Shopify Analytics won't show you your 404s easily, but Google Search Console will — under Pages, look for "Not found (404)." Shopify makes these 301 permanent redirects automatically, and pointing a dead product to its main collection beats dumping everyone on the homepage. Run this cleanup monthly.
