I was just like, it was way too thin because nowadays, the last couple of years, we've been so thick. I mean, we've lived with these beers as long as we have. I hope that we knew them. Also, this held up super well. Yeah, right? Shout out to my aging world. Can you tell people where you're aging it? What's the temperature? In my basement that sits at around like 65 68 degrees.

um Krampus emerging from the darkness was something that Tim and I talked about early on. And back when I was younger, I used to do, I don't know when it started. I think it was like, you know, ah the Rammstein album, Sinsucht?

The very first one they put out with Du haste on it. If you open up, and this is how old I am because I am 41, you open up the CD and you would... I know. And then you open up the CD packet and then there was all the different faces. They were top lit and some of them had like a spatula in their mouth. They had all these weird things. I started taking black paper and I would take white chalk and I would do kind of this exposure where it was faces emerging out of darkness like the Rammstein album. and i have a whole binder at home full of these faces and i told uh tim when we first started doing it was like i want sort of like one of these things i used to do but like krampus but coming out of the dark at you and he's like got it and he came up with this got it got it absolutely republicans are demons but uh but then like yes that's exactly what i was

So, uh, so this was Krampus emerging out of darkness and I still love it to this day. It was one of those perfect things that kind of explains, uh, one of my relationships in the business, which is mine and Tim's over the years. Very easy for us to work together. yeah tim i have an idea on it and he jump up with it i'm like cool And then we took a couple things and then we're like on to the next. and and So it makes it efficient team and it could be, it used to be just you and I, but now it's like me, you, Matthew, fucking the whole team. Wait, wait, you are fucking the whole team? That's the intro for the last episode. We are indeed, yes. Why do you think we have very little turnover, girl? i mean, we turn over a lot. right we're not clipping So anyway, ah every every year we have ah an issue with Krampus. It doesn't matter what it is. and And Matthew, because he is the type A that OIB absolutely needs.

Matthew, I love you so much. You are the type A person that makes sure that the wheels go round and that things get done. And you are set with so many obstacles with all of us. Fucking weirdos, creatives, and just kind of assholes sometimes. We're like, let's throw down a fucking rumble strip for Matthew, see how he handles it. And let's be nice to have that version of Matthew. He... No, but Matthew does make the whole thing roll. And this year, this year he he really did plan. He's like, I know things go wrong with Krampus every year. So I'm going to have a whole ass week to this year. And we're like, cool. And then there was like one week where nothing happened because the beer, a lot of things happened. So we had the total amount we brewed at Walnut. And we put them into barrels. First of all, we still it was cursed from the beginning, just so you know, because the original brew didn't attenuate the way we wanted to. We were weren't using the right water to grist ratios.

And so the first versions were too sweet and not as alcoholic as would we needed. So one third of the total beer produced ended up being a higher attenuating beer, which means it was...

You know, very high in alcohol 18% and we blended it with a hole we made a good product to put into the barrels and got the barrels great Barrels are aging and I told you guys earlier about the intense heat intense cold that was happening and me just kind of Quietly freaking out all year looking at these barrels every time I came in to see these guys I'm gonna go my god these fucking barrel. This is we trash it's gonna be trash and um And then finally we tasted them. Wasn't trashed, thank God. ah Took them all out. I brought barrels in a U-Haul down from Montrose to Walnut to blend into the hole. We made one big tank of blended Krampus. So we've got this beautiful, you know, a base that we're ready to fucking package. Let's go.

Creative Brewing Solutions

And so we bring in we bring in a couple other barrels for Melange. We get that going. There was problems with that. One of our of our hoses was pinched. But then we come to find out that where the jackets are in these tanks is super high compared to where the amount of liquid is that we're bringing into the tanks. And that was giving us the most problems. The Yeah, because cool the tank, but ah if you don't reach above a certain point, it's not going to cool the liquid below. yeah It's kind of like, you know, ice freezes on top and you've got a bunch of liquid below in a lake.

Same deal. So, and our thermometers, our thermal wells weren't working correctly, so we thought the beer would be cold enough to package. It wasn't. So, there was a couple of ideas that we had and I was like, well, we could, well, somebody was like, we could put them back into barrels, put them on a U-Haul, take them back to Montrose, un-barrel them again. could keg them, put them into kegs, un-keg them at the pub. Wow. and there was a lot of shitty like ideas uh that were the best possible solutions at those times yeah they're shitty ideas only because only because they were i'm not i'm not saying they were the best i'm not saying i'm not saying the ideas sucked i'm saying they sucked because it was going to situation yeah the situation was going to awful Then I was like sitting there and I was like alright Goose Island is right down the street these guys have tanks on tanks on tanks I could either buy a tank from them and haul it down and we could put it in the brewery and hook it all up and we could start infusing a stink or maybe they have something different and Sure should I call it Mike Siegel from Goose Island and said I'm in a pickle and

And he goes, what kind of pickle? Well, this one's extra briny, friend. And i told him the whole thing. And he said. you say extra briny? Extra briny. Pickle. And he he he said, yeah i think I have two options for you. One is more permanent.

And one is more right now. Do you want a permanent solution? Or would you like something that'll get you through Krampus right now? I said, I think the latter. And so he had this tank that had been used as a stainless steel tank. Very, very light that they were keeping in their barrel warehouse and never used before, but had an attachment on that a spray ball so we could do CIP and everything like that. And I was like, let's put it in my truck. CIP is a clean in place. in place That is to allow us to sanitize the tank and get it fully clean and fully you know health code all that good stuff fun stuff make sure that the beer doesn't get infected yeah yeah so I was like okay this could work and so had to check the weight limit on the back of my truck make sure and do some math and then we basically took this thing i had like four ratchet straps that ratchet it down holy shit and there's a one and a half tri-clant fitting on it And had the guys down at Walnut passivate, which means you use like a very, very acidic chemical to fill in any kind of gaps, scratches on the inside that might be holding any kind of bacteria. And then do two CIPs on it, which means both caustic and acid rinses. And then we were like, okay, here we go. So I strapped it back one truck in at five barrels at a time. i was taking this from, yeah, I was taking this from um Walnut to Montrose. And it was 30 individual trips. Holy shit. 15 round trips. And that doesn't include the stuff that we had to do after that. Because there was a few more after that for other things that we had to do. Break it, sweetie. So basically... i would i would pull i back the truck up into walnut and i would reverse all the way into the brewery and Cole or Tim would be there with a block and bleed in our hose from the tank hook it up, bleed up the top, fill it up, holy shit unplug it and then I would go down Montrose and I would pull

back up in the in the brewery would go to the big uh door which is not a very big door at all to the back of montrose and max would be there with his hose to hook it up home with the ingredients for all the infusions in the tank already so like when we did any of these infused beers whether it was chomperado krampus or coconut I would have already had to have prepared the products with the team, make sure all the products are ready, make sure they have them bagged, call them, be like, all right, going to start moving liquid and then bring liquid. It took us. even Even better, some of the times when he was at Walnut, we were actually canning during that. So someone would have to peel off the canning line to go help load beer into there while we're canning other beer. Yeah.

And of course, Matthew Pat like made sure everything was set up for us and it still fucked up and took another week off production. it's and it was And we, like, again, year after year, barely slide under the door.
